Free Zero-Waste Veggie Soup

Why buy store-bought broth when you can make it completely for free? Stop throwing out your vegetable scraps and transform them into a rich, flavorful, and nourishing homemade soup broth!

Ingredients

  • Saved Vegetable Scraps (onion skins, carrot ends, celery tops, garlic peels, herb stems, etc.): 1 full freezer bag/container

  • Water: Enough to cover the scraps in a large pot

  • Salt & Seasonings: To taste (e.g., bouillon, pepper, or herbs)

Instructions

  1. Collect your vegetable scraps in a reusable bag or container and store them in your freezer until the bag is full.

  2. Dump the frozen vegetable scraps into a large pot and cover with water.

  3. Bring to a boil, then reduce heat and let it simmer for about 1 to 2 hours until the broth is rich and flavorful.

  4. Strain the liquid through a fine-mesh strainer or funnel into glass mason jars.

  5. Stir in your preferred seasonings, salt, or spices to taste.

  6. Use your fresh zero-waste broth as a base for soup noodles, dumplings, or simply sip on it warm! Enjoy!
