Homemade Roma Tomato Sauce

Ingredients
Roma Tomatoes: 1 bushel, halved or chopped
Onion: 1, chopped
Zucchini: 1, chopped
Carrots: Grated or chopped
Olive Oil: For drizzling and sautéing
Garlic: Several cloves
Fresh Herbs (Oregano, Basil, Rosemary): A handful
Water: As needed for consistency
Freshly Ground Black Pepper: To taste
Vegeta Seasoning (or salt): To taste
Instructions
Lay your Roma tomatoes out on a sheet pan, drizzle with olive oil, and roast in the oven at 350°F for 20 minutes (chop them beforehand if you prefer a chunkier sauce).
Meanwhile, heat up some olive oil in a big pot and sauté your chopped onion, zucchini, and carrots.
Add the roasted tomatoes into the pot along with water, garlic, and fresh oregano, basil, and rosemary.
Give it a good mix and let it simmer down for at least an hour.
Use an immersion blender to puree the sauce until completely smooth.
Stir in freshly ground black pepper and Vegeta seasoning to taste, then toss with your favourite pasta and enjoy!
