Cherry Banana Loaf

Ingredients
All-Purpose Flour: 1 3/4 cups (210 g)
Cane Sugar: 1/3 cup
Baking Powder: 1 tsp
Baking Soda: 1 tsp
Salt: Pinch
Avocado Oil: 1/3 cup
Vanilla Extract: 1 tsp
Overripe Banana: 1 large, mashed
Fresh Cherries: 1 cup, pitted and chopped
Almond Milk: 1/4 cup
Instructions
In a medium-sized mixing bowl, mash your overripe banana well, then add all of your remaining ingredients straight into the bowl: avocado oil, vanilla extract, all-purpose flour, cane sugar, baking powder, baking soda, a pinch of salt, and your chopped cherries.
Mix gently just until everything is combined—a few lumps are totally fine! If the batter feels too thick, splash in a little almond milk.
Pour the batter into your greased loaf pan, and place in your oven at 350°F for about 50 minutes to 1 hour, or until a toothpick inserted into the center comes out clean.
Once it's done baking, let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
