Ponderosa Pine

Crafted with gin and zesty lemon juice, adorned with a flocked rosemary "tree” and crowned with a dusting of "snowy" shredded coconut, this refreshing drink is perfect for Christmastime and looks like it’s a scene right from a snowglobe!

Ingredients

  • Vegan Marshmallows: a few

  • Gin: 1 oz (omit for mocktail, or sub for non-alcoholic version)

  • Lemon Juice: 1 oz

  • Sparkling Water: 2 oz

  • Small Rosemary Sprig

  • Powdered Sugar (optional)

  • Shredded Coconut (optional)

  • Ice: 1/2 cup

Instructions

  1. Melt the marshmallows, and decorate the inside of your glass, sliding a spoon across the inside. Use the remaining melted marshmallows to create a rim for your glass.

  2. Cut a piece of a rosemary sprig to resemble a pine tree. If you’d like to create a flocked look, toss it in some powdered sugar.

  3. In a shaker, combine gin if using, lemon juice and sparkling water. Shake.

  4. Pour it into your decorated glass, and add in the rosemary tree. Add in some shredded coconut for a snowy look. Enjoy!

I found that the rosemary tree stuck well on the marshmallow decoration on the inside of the glass. If yours isn’t holding, add some melted marshmallow to the back of your tree, and try sticking it on!
For added flavour, try adding flavoured sparkling water! My favourite flavours with this drink are grapefruit and lemon/lime!
