Easy Broccoli Salad

Ingredients

  • Broccoli: about 8 cups chopped, or 2 heads of broccoli

  • Red Onion: 1/3 cup, diced

  • Sunflower seeds: 1/3 cup

  • Dried Cranberries: 1/2 cup

  • Vegan Mayo: 3/4 cup

  • Apple Cider Vinegar: 3 tbsp

  • Nutritional Yeast: 2 heaping tbsp

  • Water: 1/4 cup

  • Lemon Juice: a splash (optional)

  • Salt & Pepper: to taste

Homemade Dried Cranberries

  • Cranberries: 1 cup, whole

  • Honey: 2 tbsp

Instructions

  1. If making homemade dried cranberries instead of pre-made ones, preheat your oven to 325. Place your cranberries on parchment paper, add in the honey and swirl around until evenly coated. Bake until the cranberries have dried out, about 30 mins.

  2. Chop your broccoli into small bite-sized pieces and place into a large bowl.

  3. Add in your chopped onion and sunflower seeds.

  4. Prepare your dressing. In another bowl, combine mayo, apple cider vinegar, nutritional yeast, water, lemon juice if using and salt and pepper. Whisk until smooth.

  5. Add in your cranberries, followed by the dressing and mix to combine. Enjoy!

Feel free to swap the honey for maple syrup or agave!
